A blend of 50% Pinot Noir and 50% Chardonnay, grapes were handpicked and whole bunch pressed, followed by a slow, cool fermentation to maintain the freshness and aromatics. Bright and fresh, the bouquet shows red apple, citrus blossom, and lemon zest, with floral and mineral notes. The palate is crisp and vibrant, led by green apple and citrus, with hints of strawberry and fine bubbles. This wine is a lively expression of place and purity. Perfectly suited to fresh oysters, prawns, sashimi, goats curd and Jamón.
